 Understanding how neutrinos interact with atomic nuclei is one of the majo
 r challenges in modern particle physics and is essential for the next gene
 ration of neutrino oscillation experiments. Although the initial weak inte
 raction is relatively well understood\, the resulting excitation evolves w
 ithin a strongly correlated quantum many-body system before the final part
 icles emerge from the nucleus.\nIn this colloquium\, I will discuss the th
 eoretical challenges of modelling neutrino-nucleus interactions\, focusing
  on recent advances in describing both the initial interaction and the sub
 sequent nuclear dynamics. I will also introduce an emerging interdisciplin
 ary direction that combines nuclear physics with quantum simulation\, expl
 oring how ultracold atomic systems may provide new insights into the real-
 time evolution of nuclear many-body dynamics and help improve the precisio
